So I’m started dark souls yesterday and I’ve been playing nearly constantly. It’s epic. I’ve got the uchigatana upgraded to +5, since that is what I’ve read to do. But after that chaos, fire, raw damage etc is overwhelming and I don’t wanna do anything I’ll regret. At the moment I’m not look by for PvP, just complete the game.

Even though the Uchigatana requires 14 strength and 14 dexterity it's best variant Normal+15 (In my opinion) has an A in dexterity with nothing in strength. Even looking at the other variants it's easy to conclude that this is primarily a dexterity weapon.
Depends on your stats, really. But since it is a DEX weapon I would recommend sharp infusion and leveling up DEX. It depends on your stats. If you have high Dex you should infuse it with a sharp gem, if you have high strength maybe you should be looking to use a different weapon as it wouldn't scale very well with strength.Boards.
