You can beat the EE on Solo but you won't get any reward because the last step you unlock after beating the EE requires at least 3 people so you are not able to obtain the secret calling card and the summoning key symbol in the zombies menu
No, it is not possible to complete the entire Shadows of Evil Easter Egg solo. The full Shadows of Evil Easter Egg requires four players in order to complete it. Only last step needs 4 players.
